Ingredients

  • 4 skinless, boneless chicken breasts
  • 1 (9 oz) pkg frozen chopped spinach, thawed
  • 4 mushrooms, chopped
  • 1/2 c chopped celery
  • 1/4 c chopped onion
  • 3 tbsp butter, divided
  • 2 slices day-old bread, crumbled
  • salt and pepper

Step 1

Preheat oven to 325. Pound chicken to 1/4-inch thickness between plastic wrap; set aside. Drain spinach and squeeze dry; set aside

Saute mushrooms, celery and onion in 2 tbsp butter in skillet over medium heat for 4 min. Add spinach and bread; add salt and pepper. Mix well

Spoon stuffing onto chicken. Overlap ends to enclose filling and secure with toothpicks. Place in a lightly greased baking dish. Brush with remaining butter

Bake for 30 min or until chicken is cooked through. Remove toothpicks. Cut into slices
