Ingredients

  • 5# ground beef
  • 4 T. Curing salt
  • 1 ½ tsp. Liquid smoke
  • 1 tsp garlic powder
  • 1 ½ tsp coarse pepper
  • 2 ½ tsp. Mustard seed

Step 1

Knead all ingredients. Place in bowl, refrigerate. Knead 5 minutes for four days. On 4th day, knead, and then form into rolls, 2” thick. Bake on rack, so grease drops out as it is baking – 12 hours at 150 degrees. Drain on towels.
