Red Beans with Dumplings

Ingredients
- 2 c dry kidney beans
- ham hock
- 1/4 c green pepper, chopped
- 1/2 c onion, chopped
- 3 cloves garlic, minced
- 1 shallot, chopped
- 2 T tomato paste
- 1/4 t black pepper
- 1 thyme sprig
- Soup Dumplings

Preparation
Step 1
1) Cook beans and ham in 6 c water on medium heat 1 hour.
2) Saute pepper, onion, garlic, shallot, and tomato paste. Add black pepper and thyme. Cook 30 min. uncovered.
3) Drop dumpling batter in in spoonfuls and cook 15 min. uncovered. Do not stir.
