Blueberry and lemon Tiramisu

I love Tiramisu but really love when I find this blueberry and lemon Tiramisu is fresh and delicious and you can use freeze blueberry or fresh (this recipe is from my blog)

Ingredients
- Ingredients(9 servings)
- 1 to 2 lemon
- 3 1/2 cups of blueberries
- 1 cup of sugar
- 4 tabls. of water
- 4 plain low fat yogurt or greek yougurt (600 grs. aprox)
- 2 pkg. lady fingers ( 300 grs. aprox.)
- mint spring for garnish

Preparation
Step 1
1. From lemon (s) grate 1 1/2 teaspoons peel and squeeze 1/2 cup juice.
2. In medium sauce pan , combine 1 1/2 cups of blueberries, 1/4 cup of sugar and 1 tablespoon of water. Heat on medium 5 minutes, or until blueberries soften and juices thicken, stirring occasionally. Transfer to medium bowl and stir in 1 1/2 blueberries.Set aside.
3.Prepare lemon syrup : In microwaves safe small bowl, combine 1/4 cup sugar and remaining 3 tablespoon of water. Cook in microwave on high 1 minute. Stir in 3tablespoons lemon juice and 1 tablespoon lemon peel.
4 In medium bowl, stir together with yogurt and remaining 1/2 cup of sugar 1 tablespoon of lemon juice and 1/2 teaspoon lemon peel.
5. In a ceramic or glass baking dish arrange half of lady fingers over blueberries. Brush with half of lemon syrup. Spoon blueberries mixture evenly over ladyfingers. Arrange remaining ladyfingers over blueberries.
Brush with remaining lemon syrup.
Spoon yogurt mixture on top , spreading evenly.
Cover and refrigerate by 3 hours. To serve top tiramisú with remaining blueberries and garnish with mint leaves.
