Ingredients

  • 4 whole chicken breasts, skinned, boned, halves
  • ¼ cup flour
  • Salt and pepper
  • 2 tbs. butter
  • 2 tbs. oil
  • 1 cup sliced mushrooms
  • 2 tbs. chopped onion/shallots
  • ½ cup Irish whiskey
  • 1 cup whipping cream
  • Chopped fresh parsley

Step 1

4 whole chicken breasts, skinned, boned, halves
¼ cup flour
Salt and pepper
2 tbs. butter
2 tbs. oil
1 cup sliced mushrooms
2 tbs. chopped onion/shallots
½ cup Irish whiskey
1 cup whipping cream
Chopped fresh parsley
Place chicken between sheets of waxed paper, and flatten to ½ inch. Dredge in flour and season with salt and pepper.

Over medium heat combine oil and butter, add chicken and sauté until golden, adding oil and butter as needed. Remove cooked pieces, keeping warm. Pour off all but 2 tbs. of fat, add mushrooms and onions, cooking 2 minutes, or until softened.

Pour in whiskey and bring to a boil; boil 1-2 minutes or until most of the liquid has evaporated. Add cream, return to a boil and cook an additional 1 – 2 minutes; or until cream thickens slightly. Return chicken to pan; turn to coat evenly, and heat through 1 minute. Garnish with parsley.
