oven temp-375 Preheat oven, saute’ onions in butter until tender, add spinach, cook until evaporated, stirring occasionally. Remove from heat, stir in cottage or ricotta chs. Sour cream and 1 cup shredded cheese, warm tortillas as directed, fill each tortilla with ¼ cup filling roll up, place in greased 9x 13 pan, pour enchilada sauce over tortillas, top with remaining cheese, bake until heated, top with sour cream and onions if desired.
