Ingredients

  • 2 3 oz. packages orange flavored jello

  • 2 cups boiling water

  • 1 cup cold water

  • 2 cups apricots, chopped

  • 2 bananas, diced

  • 40 miniature marshmallows

  • Topping:

  • 1/2 cup sugar

  • 2 Tbsp flour

  • 1 egg, beaten

  • 1 Tbsp butter

  • 1 cup pineapple juice

  • 1/2 pt. whipped cream

Directions

Drain the apricots and pineapple, reserving juices. Dissolve gelatin in the boiling water and stir in 1 cup of apricot juice and the cup of cold water until it is syrupy. Add chopped fruit and marshmallows. Pour mixture into dish. Chill until firm and finish with topping. Topping: Combine sugar, flour and mix. Add the beaten egg, butter and pineapple juice and mix. Cook on low heat until thick. Cool the mixture and fold in whipped cream. Frost the salad.
