Ingredients

  • 1/2 c butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1/4 red pepper, chopped
  • 4 slices toast
  • black pepper
  • 1/4 t thyme
  • 1 c (8 oz) crabmeat
  • 1 T parley, chopped
  • 4 fish fillets
  • juice of lemon

Preparation

Step 1

1) Saute onions, garlic, celery, and pepper in 2 T butter.

2) Butter the toast with 1 T of butter and chop till fine. Add to the vegetables. Season with black pepper and thyme.

3) Fold in crabmeat and add parsley.

4) Squeeze lemon juice on fillets. Arrange the fillets with darker side up in a buttered baking dish. Pile with filling and fold fish over top. Dot with butter.

5) Bake for 20 min. at 400 degrees.
