- 1/4 cup black pepper
- 1/4 cup paprika
- 3 tablespoons sugar
- 2 tablespoons salt
- 2 teaspoons dry mustard
- 2 teaspoons cayenne pepper

Step 1
Mix all ingredients. Work 1/2 of the mixture into the meat 12 to 24 hours before cooking. Apply remaining rub before smoking. Makes enough for about 5 to 6 pounds of meat.
