Ingredients

  • ICING:
  • 3 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 eggs
  • 1 1/4 cups Crisco oil
  • 2 tsp vanilla
  • 1 cup crushed pineapple, undrained
  • 1 cup chopped pecans
  • 1/2 cup chopped maraschino cherries
  • 1 1/2 cups mashed babanas
  • 1 1/2 pkgs.(8 oz.) cream cheese softened
  • 1 1/2 sticks butter
  • 5-6 cups confectioners sugar
  • 1 1/2 tap vanilla
  • pacan halves
  • Maraschino cherry halves

Preparation

Step 1

Sift first 5 ingredients together into large mixing bowl.
Mix eggs and oil together and stir into dry mixture, then stir in next 5 ingredients. Divide batter between 3 greased and floured layer cake pans. Bake at 350 degrees sor 25 to 30 minutes or until cake tester comes put clean. Cool and ice.

ICING:
Cream butter and cream cheese together. Add sugar, a little at a time, until of spreading consistency. Add vanilla. Ice cooled cake and decorate top with cherry and pecan halves.
