Easy Cheesy Strudel

Note: Strudels can be assembled up to 1 month in advance. Wrap tightly and freeze. Thaw in the refrigerator one day prior to eating.

- 2 tablespoons butter
- 1⁄2 cup chopped red bell pepper
- 1 cup chopped onion
- 12 eggs, divided
- 1 cup shredded Cheddar cheese
- 1 (3-ounce) package cream cheese, softened
- 1⁄4 teaspoon garlic salt
- 1 pound bacon, cooked and crumbled
- 1 (17.3-ounce) box frozen puff pastry, thawed
- 1 tablespoon grated Parmesan cheese

Step-by-Step Instructions:
1.Line a baking sheet with parchment paper; set aside.
2.In a large skillet, melt butter over medium-high heat. Add bell pepper and onion; cook for 5 minutes, stirring frequently, or until tender.
3.In a medium bowl, whisk 11 eggs. Add eggs to mixture in skillet; cook, stirring frequently until set. Add cheese, cream cheese, and garlic salt, stirring until melted. Add bacon, stirring to combine. Spoon mixture into a medium bowl, cover, and refrigerate.
4.On a lightly floured surface, roll pastry into a 12-x-10-inch rectangle. Trim pastry, referring to photo. Spoon half of egg mixture down center of pastry. Referring to photos, cut strips and braid pastry. Transfer to prepared baking sheet. Repeat procedure with remaining puff pastry and egg mixture.
5.Preheat oven to 400°.
6.In a small bowl, beat remaining egg; set aside.
7.Bake strudels for 25 minutes.
8.Remove from oven, brush crust lightly with beaten egg and sprinkle with Parmesan cheese. Return to oven, and bake for an additional 10 minutes, or until golden brown. Cut into slices to serve.
