Ingredients

  • 1 lb boneless chicken (about 4 pieces)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 c flour
  • 2 tbsp margarine or butter
  • lemon juice (1 tsp per piece of chicken)
  • 1/4 c water
  • 1 beef bouillon cube
  • 1 tsp parsley flakes

Preparation

Step 1

Season chicken pieces with salt and pepper.
Coat pieces with flour.
Melt butter in skillet.
Brown chicken on both sides (about 3 minutes per side).
Pour lemon juice and water over chicken pieces.
Place bouillon cube in center of skillet and let melt.
When water in skillet boils, reduce heat to a simmer.
Sprinkle chicken with parsley.
Cover and simmer for 30 minutes.

Note: Use less than 6 tsp lemon juice for a double batch.
