Zucchini Casserole

Ingredients
- 6 cups sliced zucchini
- 1/2 cup chopped onion (or more if you want)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded carrots
- 1 box stove top stuffing (usually chicken or just herb style)

Preparation
Step 1
Boil onion and squash 5 minutes--drain well. Combine soup, sour cream, carrots, and the season packet from stuffing box. Fold into squash. Spread (just to cover) the bread crumbs from stuffing box in 9x12 (I sometimes use a smaller pan). Spoon vegetable mixture on top. Sprinkle remaining bread crumbs on top. Bake 350 degrees for 25-30 minutes.
