Peppermint Fudge Filling & Chocolate Whipped Cream Frosting

Ingredients
- 3 cup whipping cream
- 1/4 cup butter
- 1 lb. chopped bittersweet chocolate
- 1/2 teaspoon peppermint extract
- 1/3 cup finely chopped peppermint sticks

Step 1
In a medium saucepan heat and stir 1 cup whipping cream andbutter over medium heat until butter melts. Remove from heat. Add chocolate; let stand, uncovered, for 5 minutes. Stir mixture until smooth.
For Peppermint Fudge Filling, transfer 1 1/4 cups of the chocolate mixture to a small bowl. Stir peppermint extract into chocolate mixture in bowl. Cover and chill for 1 to 2 hours, stirring occasionally, or until mixture is cold. Stir finely chopped peppermint sticks.
Let remaining chocolate in saucepan cool to room temperature.
For the Chocolate Whipped Cream Frosting, in a large chilled mixing bowl beat 2 cups whipping cream with an electric mixer on medium speed until soft peaks form. For in half of the remaining room temperature chocolate mixture at a time.
