  • 1 - 2 cups vegetable oil
  • 36 Corn Tortillas

Step 1

In a large pot, cover the chicken with water. Add the onions, jalepeños, and 1 tsp. salt; Bring the mixture to a boil and simmer until the chicken is tender (about 1 hour). Remove the meat from the pot and cool. Shred the chicken using 2 forks pulling in opposite directions. *It should resemble a string-like consistency.* In a deep pan, heat the vegetable oil to about 375 - 400 degrees Fahrenheit. Dip the corn tortillas into the hot oil for 1/2 a second or until the tortilla is soft. Add the shredded chicken to the middle of the tortilla. Roll the tortilla up and place a toothpick through the middle of the flauta. Deep fry each flauta in the oil until the corn tortilla turns golden brown. Allow the flautas to cool, remove the toothpick, and serve with salsa, sour cream, and guacamole.
