This was at one time a favorite recipe of mine. It is so good actually fixed on an outside grill (which is the way I fixed it).

Ingredients

  • 3 pounds ground chuck or round
  • 1 clove garlic, mashed
  • 1 large onion, finely chopped (1 cup)
  • 1 teaspoon leaf oregano, crumbled
  • 1 . Teaspoon leaf basil, crumbled
  • 1/2 teaspoon leaf savory, crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups packaged bread crumbs
  • 1 1/2 teaspoon liquid hot pepper seasoning
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup brewed strong coffee
  • 1/4 cup dry red wine
  • 1/2 teaspoon sugar
  • Dairy sour cream (optional)

Step 1

Combine beef, garlic, onion, oregano, basil savory, salt, pepper, bread crumbs, mustard, hot pepper seasoning and Worcestershire sauce a large bowl; mix well. Press mixture into 9x5x3 inch loaf pan to shape, turn out loaf onto a double thickness of heavy duty aluminum foil large enough to completely enclose loaf.

Combine coffee, wine and sugar in a 1 cup measure; brush mixture over meat loaf. Wrap foil securely around loaf, folding in ends to keep in juices.

Grill meat loaf about 6 inches from coals, unwrapping and re-brushing with coffee mixture several times, then rewrapping. Check at 1 ½ hours; meat should be done throughout; but juicy and tender.

Combine any remaining coffee mixture with sour cream to top slice of meat loaf.
