Ingredients
- 1/2 c onion, chopped and sauteed
- 2 1/2 c corn
- 3 c chicken broth
- 1 red pepper, chopped
- 1 tomato, chopped
- Juice from 1/2 lime
- cilantro

Preparation
Step 1
1) Cook onion, corn, and broth for 10 min.
2) Blend 1 c of solids and 1/3 c broth. Return to pot and heat to boil.
3) Stir in red pepper and tomato. Heat 1 min.
4) Add lime juice and cilantro when ready to serve.
