Favorite Slow-Cooker Bean Cuisine
No time to cook your own beans? The slow cooker makes it practical. Just let them simmer overnight or while you're at work, and they're ready when you are. Cheaper than canned too!
Cuban Black Beans
Combine 2 c black beans, a 14.5 oz can tomatoes; a chopped onion and green bell pepper, 3 cloves garlic, 11/2 tsp salt, 1 tsp cumin, 1/2 tsp oregano, a bay leaf, and 5 c water in large cooker. Cover; cook on high 4 to 6 hours or on low 8 to 10 hours. Stir in 2 Tbsp red wine vinegar. Season to taste with salt and pepper.
Baked Beans
Cut 4 slices thick-cut bacon into 1" pieces and fry until just crisp. Combine with 2 c navy beans, a chopped onion, 3 Tbsp molasses, 2 Tbsp ketchup, 1 Tbsp each brown sugar and mustard powder, 1 tsp salt, 1/8 tsp cayenne, and 4 1/2 c water in large slow cooker. Cover and cook on low 8 to 10 hours. Season to taste with salt and pepper.
"Refried" Beans
Combine 2 c pinto beans, a chopped onion, a 4.5 oz can chopped green chilies, 2 cloves garlic, 1 tsp each cumin and salt, and 4 1/2 c water in large slow cooker. Cover; cook on high until very soft, 4 to 5 hours. Mash with potato masher. Season to taste with salt and pepper.

i have not been able to find turkey legs so i've been making this with chicken thighs and legs. my husband does not like sweet potatoes and he really liked this dish. next time i made it, i tried it with normal white potatoes, and it came out bland. we've switched back to sweet potatoes. and now that thanksgiving season is upon us, i finally found turkey legs, so i'm looking forward to trying the recipe properly.
