Cupcakes - Dark Chocolate Bacon

Ingredients
- 12 slices bacon
- 2 cups flour
- 3/4 cup plus 1 Tbsp. unsweetened cocoa powder
- 2 cups sugar
- 2 tea. baking soda
- 1 tea. baking powder
- 1/2 tea. sea salt
- 2 eggs
- 1 cup strong coffee, cold
- 1 cup buttermilk
- 1/2 cup vegetable oil

Preheat oven to 375 degrees. Line muffin cups with liners.
Cook bacon, drain, crumble and set aside.
In a large bowl, stir together flour, 3/4 cup of the cocoa powder, the sugar, baking soda, baking powder, and salt. Make a well in the center and pour in eggs, coffee, buttermilk, and oil. Stir just until blended.
Mix in 3/4 of the bacon (saving the large pieces, 1/2" or so, to use as garnish - set straight up in the frosting). Spoon batter into prepared cups, dividing evenly. (Batter will be thin - don't panic.)
Bake until the tops spring back when lightly pressed, 20-25 minutes. Cool in pan set over a wire rack. When cook, frost with your favorite chocolate frosting and garnish with reserved bacon.
