Gazpacho Shooters

These fun little non-alcoholic shooters are so refreshing and summery! Serve them in large 2-oz shot glasses as an hors d'oeuvre at a party, or divide into larger bowls for a fresh and seasonal first course for four.

Ingredients
- 2 cups Heinz Vegetable Cocktail
- 1 cup finely chopped seeded tomatoes
- 1/2 cup finely chopped yellow peppers
- 1/2 cup finely chopped English cucumbers
- 1/4 cup finely chopped red onions
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. extra virgin olive oil
- 1 clove garlic, minced
- 1/4 tsp. pepper

Preparation
Step 1
Mix ingredients until blended.
Refrigerate 1 hour.
Pour into 2-oz. shot glasses to serve
