Hot Potato Salad

Ingredients
- 4 large potatoes, boiled with skin and still hot
- 4 slices bacon
- 3 green onions, chopped
- 1 stalk celery heart, finely chopped
- 1 garlic clove, minced
- 1/2 cup red wine vinegar
- 3/4 cup chicken stock, heated
- 1 tbs. chopped chives
- Salt and pepper

Preparation
Step 1
Peel and cut potatoes in thick slices. Place in 150 degree oven to keep warm.
Cook bacon until crisp and set aside.
Add onions, celery, and garlic into bacon grease, cook 3 minutes and then increase heat to high and add vinegar. Cook 1 minute; add chicken stock and continue cooking 2 minutes.
Stir in chives and season generously. Pour over hot potatoes and let stand 10 minutes. Serve on lettuce leaves and sprinkle with bacon.
