Ingredients

  • 1/4 c butter
  • 1/3 c flour
  • 1/2 c milk
  • 1 c cottage cheese
  • 1/4 t paprika
  • 1/2 t dry mustard
  • 1/2 t worchestershire sauce
  • dash tobassco
  • 6 Eggs Separated
  • 1 t salt
  • 1/2 t cream of tarter
  • 1/2 c Sharp Cheddar (Optional)

Preparation

Step 1

Separate Eggs and beat egg whites till stiff with cream of tarter and salt
Melt butter and add flour in pan cook as a roue
Whisk in milk and stir constantly till thickened. Remove from heat
Add remaining cheese and spices stirring constantly til smooth add egg yolks
Fold together with beaten egg whites
Pour into buttered souffle pan
Bake in a warm water bath
at 325 degrees until browned and toothpick comes out clean, approximately 1 hour
