  • ¼ cup margarine
  • ¾ cup sugar
  • 3 large eggs, at room temperature
  • 1 ½ tsp. vanilla
  • 3 ripe bananas, mashed
  • 1 ½ cups buttermilk, at room temperature
  • 2 ¼ cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt

Step 1

Preheat the oven to 350 degrees, grease a bundt pan. Ad medium speed, beat the margarine and sugar until light and fluffy. Beat in the eggs, one at a time, until well blended. Stir in the vanilla, bananas, and milk, until well blended. In a separate bowl, combine the flour, soda, and salt and add this to the banana mix. Stir until just combined. Pour into a pan and bake 40 – 45 minutes. Cool 30 minutes before turning out of the pan.
