Ingredients

  • 1 oz. chopped mozzarella
  • 1 oz. chopped bacon
  • ½ tsp. dried basil
  • 2 boneless chicken breast, flattened between wax paper
  • Flour seasoned with salt and pepper
  • 1 beaten egg
  • 1 cup bread crumbs
  • 1 ½ tsp. olive oil
  • 1 tbs. sliced scallions
  • 1½ tbs. butter
  • 1 tbs. chopped parsley
  • 1 tsp. lemon juice

Step 1

Toss the cheese, bacon, and basil together. Spoon mix onto ½ of each breast, fold the other half over and press the edges together. Dredge breast in flour, dip into egg and roll in crumbs. Heat oil, cook chicken 10 minutes and remove. Wipe pan and cook scallion in butter over low heat for 2 minutes. Add parsley, juice, salt, and pepper, pour over chicken.
