Ingredients

  • 2 eggs
  • 1 (16-oz) can creamed corn
  • 2-1/2 cups sweet milk or buttermilk
  • 1/2 cup salad oil or bacon drippings
  • 1 onion, chopped
  • 1 (4 oz) can chopped green chilies
  • 2 cups corn meal
  • 1 tsp baking soda
  • 1 tsp salt
  • 1-1/2 cups grated sharp Cheddar cheese

Step 1

Mix eggs, corn, milk, oil, onion, and green chilies. Mix together corn meal, soda, and salt; combine with liquid mixture. Add cheese. Preheat oven to 375 degrees, put well greased pans in oven to prehjeat and pour batter into warmed pan. Bake 45 to 60 minutes. Cut into squares and serve.

Variation: Substitute cornbtread mix; omit bakoing soda and salt. You may also add a few chopped ;jalapeno peppers to give a zesty flavor.
