- 2 quarts strawberries = 5 cups crushed berries
- 7 cups sugar
- 2 quarts blackraspberiies = 5 cups crushed berries
- 6 1/2 cups sugar
Prepare fruit. Pulse is food processor.
Measure exact amount of fruit into saucepot.
Measure exact amount of sugar into separate bowl.
Stir one box of pectin into fruit in saucepot.Add 1/2 tsp butter to reduce foaming.
Bring mixture to full rolling boil.[A boil that doesn't stop bubbling when stirred] on high heat, stirring constantly.
Stir in sugar quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly.
Remove from heat. Skim off any foam.
Ladle into prepared jars. Screw lids on tightly.
Place jars in canner. water must cove jars by 1 to 2 inches. Cover. Bring water to a gentle boil and boil for 10 minutes.
remove jars and cool on towel.
