Ingredients
- 1 1/2 - 2 lbs. Boneless, Skinless Chicken Breasts
- 10 3/4 oz. can tomato soup
- 1/2 - 1 cup water
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1/2 tsp. ground ginger
- 1/2 tsp. garlic powder
- Tarragon
- Salt
- Pepper
- Vegetable Oil
- Rice
- Stir Fry Vegetables

Step 1
Season the chicken breasts with salt, pepper, and tarragon. Brown the chicken breasts on both sides in a skillet with vegetable oil over MEDIUM-HIGH heat (about 5 minutes on each side). Remove the chicken from the skillet and set aside; Cut the chicken into strips. Drain the oil from the skillet and add the tomato soup, water, ginger, soy sauce, vinegar, and garlic powder. Mix the sauce together thoroughly while bringing the mixture to a simmer. Return the chicken to the skillet and mix the sauce into the chicken strips. Cover and simmer an additional 10 minutes. In the meantime, stir fry the vegetables and cook the rice. Serve the chicken over rice with the sauce. Add the stir fry vegetables to the side of the dish.
