Roasted Beef Tenderloin Wrapped in Bacon

Ingredients
- Three pound beef tenderloin
- 12 thick slices peeled garlic
- One tablespoon ground black pepper
- 1 pound bacon slices
- 3 eight to nine inch fresh rosemary branches

Preparation
Step 1
Preheat over to 450. Using small sharp knife, cut twelve one inch dep slits all over beef tenderloin. Insert garlic slices into slits. Rub pepper all over tenderloin. Arrange bacon clices on work surface, overlapping slightly and forming rectangle. Place one rosemary branch down center of bacon rectangle, peppendicular to bacon slices. Place tenderloin atop rosemary branch. Place remaining two rosemary branches atop tenderloin. Wrap bacon slices around tenderloing and resemary to enclose tenderloin completely. Place tenderloin in roasting pan, bacon ends down.
Roast until meat thermometer inserted into center registers 125 for rare, about one hour. Remove from oven. Tent with foil and let tenderloin stand 10 minutes.
