Ingredients

  • 1 (9-inch) unbaked pie shell
  • 2 medium yellow squash
  • 1/2 medium onion
  • 1/2 green pepper
  • 1 lb. fresh mushrooms
  • 1 zucchini
  • 1 large tomato
  • 1 cup mozzarella cheese
  • 1/4 cup butter, melted
  • 2 Tablespoons mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

Pre-bake pie shell slightly (400 degrees for 5 to 7 minutes). Slice all vegetables, except tomatoes. Lightly saute sliced vegetables in butter until most of the moisture is gone. Line pie shell with sliced tomatoes. Top with sauteed vegetables. Grate mozzarella and mix with mayonnaise. Spread cheese mixture on top of pie. Bake at 325 degrees for 45 minutes.
