Ingredients
- Jerk Marinade:
- 1 pound chicken (skin on)
- jerk marinate
- Marinate the chicken in the jerk marinade for a day turning a few times.
- 1 scotch bonnet or habanero pepper or 3 jalapeno peppers (seeded and chopped)
- 2 cloves garlic (chopped)
- 2 green onions (chopped)
- 1 tablespoon thyme (chopped)
- 1 tablespoon allspice
- 3/4 teaspoon nutmeg
- 3/4 teaspoon cinnamon
- 1 teaspoon pepper
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
- 2 tablespoons white vinegar
- 2 tablespoons soy sauce
- 1 tablespoon dark rum
- 1/2 orange (juice and zest)
- 1 lime (juice and zest)
- Puree everything.

Bake in a preheated 400F oven for 40-50 minutes turning once in the middle.
