Ingredients
- 1 cup boiling water
- 1 pkg. strawberry flavoured gelatin
- Ice cubes
- 1/2 cup cold water
- 2 cups mixed berries
- 1 pkg. cream cheese (8 oz), softened
- 1 1/4 cup cold milk, divided
- 1 pkg (4 serving size) instant cheesecake or vanilla instant pudding
- 8 oz cool whip topping
- 1 pkg. pound cake, cubed

Preparation
Step 1
Stir boiling waterinto gelatin 2 minutes, until dissolved. Add enough ice to cold wate rto measure 1 cup; add to gelatin and stir until ice is completely melted. Let stand 15 minutes or until thickened and stir in berries.
Place cream cheese in a boul and beat until creamy, slowly add 1/4 cup of the milk, beating until well blended. Add remaining mil and pudding mix and beat for 2 minutes or until well blended. Gently stir in whipped topping and set aside.
Place about 1/2 the cake in a large serving bowl; cover with half the pudding mix and top with layers of the gelatin mix; repeat with remaining cake, and pudding mix. Chill 1 hour before serving.
