Ingredients

  • Crust:
  • *Can use a boxed crust mix*
  • 1 cup all purpose flour
  • 1/4 tspn salt
  • 3 tblpns cold butter
  • 3 tblspns shortening
  • 1/4 cup milk
  • Filling:
  • 1 can (14-3/4oz) salmond, drained, bones, and skin removed
  • 1 cup (4oz) shredded cheddar cheese
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 tblspn all-purpose flour
  • 1/2 tspn salt
  • 1/8 tspn pepper
  • 3 eggs, beaten
  • 1-1/4 cup milk

Preparation

Step 1

Crust:
Transfer to ungreased 9 inch pie plate or quiche dish. Bake at 350 degrees for 10 minutes.

Filling:
In a bowl, combine salmon, cheese, green pepper, onion, flour, salt and pepper; spoon into crust. Combine eggs and milk; pour over salmon mixture. Bake at 350 degrees for 50-55 minutes or until knife inserted in center comes out clean. Let stand for 10 minutes before cutting.
