Ingredients
- 3 8oz. pieces flank steak, pounded
- Salt and pepper
- 3 tsp. minced garlic
- 12 paper thin slices of pancetta
- 3 tbs. pine nuts
- 3 tbs. grated cheese
- 5 tbs. parsley
- ¼ cup olive oil
- 1 Spanish onion, pureed
- ½ cup white wine
- 4 ½ lbs. plum tomatoes, pureed
- 5 basil leaves

Step 1
Season each steak, top with garlic and 4 slices pancetta; sprinkle with nuts and cheese. Roll meat into a cylinder and secure. Heat oil; add braciole; brown and remove. Add onion to the skillet and cook 2 minutes, add wine, cooking an additional 2 minutes. Add the tomatoes and remaining seasonings. Add the braciole and simmer 1 hour or until tender.
