Ingredients

  • 3 8oz. pieces flank steak, pounded
  • Salt and pepper
  • 3 tsp. minced garlic
  • 12 paper thin slices of pancetta
  • 3 tbs. pine nuts
  • 3 tbs. grated cheese
  • 5 tbs. parsley
  • ¼ cup olive oil
  • 1 Spanish onion, pureed
  • ½ cup white wine
  • 4 ½ lbs. plum tomatoes, pureed
  • 5 basil leaves

Step 1

Season each steak, top with garlic and 4 slices pancetta; sprinkle with nuts and cheese. Roll meat into a cylinder and secure. Heat oil; add braciole; brown and remove. Add onion to the skillet and cook 2 minutes, add wine, cooking an additional 2 minutes. Add the tomatoes and remaining seasonings. Add the braciole and simmer 1 hour or until tender.
