  • ½ cup shortening

  • 1½ cups granulated sugar

  • 2 eggs

  • 1 tsp salt

  • 2½ cups cake flour

  • 1 cup buttermilk

  • 2 oz red food colouring

  • 2 tbsp unsweetened cocoa powder

  • 2 tsp vanilla

  • 1 tsp baking powder

  • 1 tsp vinegar

  • Frosting:

  • ½ cup flour

  • 1½ cups milk

  • 1½ cups butter

  • 1½ cups icing sugar


Grease and flour 2 9" round cake pans. Preheat oven to 350F. Cream shortening and sugar. Add eggs, beat until light and fluffy, add salt. Beat in cake flour alternately with buttermilk. Make paste of food colouring and cocoa, add to batter. Mix vanilla, baking powder and vinegar, sprinkle on batter and mix well. Pour batter into prepared pans and bake for 30-35 minutes. Note: batter should be the consistancy of whipped cream, so you may need to add up to 1/3 cup more buttermilk. Frosting: Combine flour and milk in medium pot, and cook, stirring constantly, until thickened. Cool. Meanwhile cream butter, sugar and vanilla. Add cooled flour mixture to sugar and butter and beat well.
