Ingredients
- 3 1/3 cups flour
- 2 tsp salt
- 1 lb (4 sticks) butter, room temp
- 2 cups sugar
- 3 tbsp finely grated lemon zest (3 lemons)
- 3 tbsp finely grated orange zest (2 oranges)
- 3 tbsp finely grated lime zest (3 limes)
- 1 tsp vanilla
- 9 eggs, room temp
- 1/4 cup lemon juice
- 1/4 tsp baking powder

Preparation
Step 1
Preheat oven to 325. Line muffin tins with paper liners. Whisk together flour and salt.
With a mixer, cream butter and sugar until pale and fluffy. Add citrus zests. Add vanilla. Add eggs, three at a time, beating well after each addition. Add flour mix in 4 batches, beting well after each.
Scoop batter into cups, fill 3/4 full. Bake 15 minutes.
Let cool completely. Top with citrus glaze or vanilla frosting.
