Ingredients

  • 2 pound boneless pork loin
  • 1 tablespoon cornstarch
  • 1 tablespoon dry Sherry Vegetable spray
  • 1 bunch green onions, cut into slivers
  • 3 garlic cloves, minced
  • Salt and freshly ground pepper to taste

Step 1

Cut the meat across the grain into thin slices, then cut lengthwise into matchstick –size strips. In a small bowl, combine the cornstarch and Sherry. Add the pork to the bowl, stirring to coat well. Marinate for as long as time permits (up to 4 hours).
Coat a wok or frying pan with vegetable spray. Heat over a high flame and add the pork mixture. Cook for 2 to 3 minutes, until lightly browned. Add the green onions and garlic and continue to cook, stirring, for another 2 to 3 minutes. Season with salt and pepper. Serve over rice or in a bowl by itself.
