Apple Cake

One of Mom's traditional fall dessert recipes. I took it on myself October of 2011 for friends that were coming through town and it was a success!

Ingredients
- Cake:
- 3 eggs
- 3 cups flour
- 2 cups sugar
- 1 tsp. baking soda
- 1 1/2 cups oil
- 2 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 cups chopped apples
- 1 1/2 cup chopped nuts (optional)
- Glaze:
- 2 cups powdered sugar
- 1/2 cup boiling water
- Caramel Sauce:
- 1/2 cup butter (or margarine)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup evaporated milk
- 1 Tablespoon flour
- 1 teaspoon vanilla

Step 1
Cake:
Beat eggs and sugar until fluffy; add oil, and stir well, add vanilla, then dry ingredients, stir in apples & nuts. Bake in greased jelly roll pan at 325 for approximately 40 minutes. (I usually use a 9 x 13 pan and bake it a little longer. Or I sometimes use 2 nine inch square pans.)
While warm, drizzle glaze.
Caramel Sauce:
Stir first five ingredients together in saucepan. Bring to a boil and boil 1-2 minutes stirring constantly. Remove from heat and add vanilla. Serve warm sauce over apple cake.
