This is a recipe that was shown on the Oprah Winfrey Show and it is some of the best chicken that my family has ever tasted.

Ingredients

  • Breading:
  • 3 Chicken Breasts
  • 5 Chicken Thighs OR 6 Drumsticks
  • 3 1/2 - 4 cups ice water
  • 1 - 2 16 oz. cartons of plain nonfat yogurt
  • Light Non-Stick Cooking Spray
  • 1 1/2 cups dried Italian Bread Crumbs
  • 1 1/2 cups all-purpose flour
  • 1 Tbsp Old Bay seasoning
  • 1/2 ts. garlic powder
  • 1/8 tsp. freshly ground black pepper
  • 1/2 tsp. Creole seasoning
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • Dash of cayenne pepper

Step 1

Place all of the breading ingredients in a medium bowl and mix well. Place the cold water and ice cubes in a separate medium sized bowl. Place the chicken pieces in the ice water. Gently shake off the excess water that is dripping off the chicken and place each of the chicken pieces in the yogurt. *Coat each piece of chicken with the yogurt, being careful not to overcoat the chicken.* Place the yogurt coated chicken pieces into the breading mixture, making sure to cover all of the yogurt on the chicken. Spray a 9" x 13" baking dish with non-stick cooking spray and place the coated chicken pieces onto the greased baking dish. Bake the chicken at 400 degrees Fahrenheit for 1 - 1 1/2 hours or until the chicken is no longer pink in the center.
