Ingredients
- 1 lb. bulk sausage
- 1 cup chopped onion
- 1 cup chopped green pepper (optional)
- 1 cup chopped celery (optional)
- 1 (14 oz) chicken broth
- 2 (14 oz) cans black-eyed peas (rinsed & drained)
- 1 cup converted rice
- 2 tablespoons garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 bay leaf

Preparation
Step 1
Saute sausage, onion, green pepper and celery in a large pot over medium-high heat. Drain and return to the pot. Drain and return to pot. Add chicken broth, rice, garlic powder, salt, black pepper and bay leaf. Bring to a boil, reduce heat and simmer for 15 minutes.
Add black-eyed peas to the pot and simmer an additional 5-10 minutes, until liquid is absorbed.
