Ingredients

  • 2 T. champagne vinegar
  • 2 T. honey
  • I T. pinot gris wine (optional)
  • 1 tsp. fresh cracked black pepper
  • 1 T. Italian parsley, chopped
  • 1 apricot, pitted and quartered
  • 2 6-ounce pieces Chinook salmon salt and pepper, to taste
  • 1 T. olive oil

Preparation

Step 1

Preheat a charcoal grill. Whisk together vinegar, honey, wine, black pepper and parsley. Add apricot pieces to the mixture and let sit, covered, at room temperature for 30 minutes.
Season salmon with salt and pepper and brush lightly with olive oil. Grill on both sides until it reaches desired doneness. Remove from grill and top with apricots and excess marinade.
