Ingredients
- 1 cup packed dried apricots
- 1 cup water
- 1 cup sugar
- 2 tbs. fresh lemon juice
- ½ tsp. pure almond extract

Preparation
Step 1
Stir the apricots, water, and sugar in a pot and cook until the apricots are soft and puffed, and have absorbed almost all of the liquid. Turn the mixture into a food processor and process until smooth, scrape the bowl as needed. Transfer the mixture to a bowl and add the lemon juice and extract, and stir to mix. Cook to room temperature and chill. Chill up to 2 weeks.
