Ingredients
- Chocolate Mint Pie:
- 1 cup plus 2 tbsp chocolate cookie crumbs, divided
- 1 cup butter or margarine, softened
- 2 cups confectioners' sugar
- 4 eggs
- 4 ounces semisweet chocolate, melted
- 2 tsp vanilla extract
- 1/2 tsp peppermint extract
- 3/4 cup coarsely chopped Andes chocolate mints
- Sweetened Whipped Cream:
- 1 cup whipping cream
- 1/4 cup granulated sugar
- 1 tsp vanilla extract

Preparation
Step 1
Spread 1 cup cookie crumbs evenly in the bottom of a 10-inch springform pan.
Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Stir in chocolate and extracts. Fold in mints. Pour into prepared pan. Freeze until firm. To serve, use knife to loosen sides of pie from pan; remove springform. Serve with sweetened whipped cream. Garnish with remaining 2 tbsp cookie crumbs.
Sweetened Whipped Cream: Beat all ingredients until stiff peaks form.
