Grilled Beer Brined Chicken

Ingredients
- 2 Cups Water
- 1/4 Cup Kosher Salt
- 1/4 Cup Light Brown Sugar
- 4 Bottles of Beer, chilled
- 2 Whole Chickens, cut up
- 2 Tbsp. Paprika
- 2 Tsp. Table Salt
- 1 Tsp. Onion Powder
- 1 Tsp. Garlic Powder
- 1 Tsp. Black Pepper
- 1/4 Cup Canola Oil

In an 8-quart container or stockpot, mix water, kosher salt, and brown sugar, stirring until the salt and sugar dissolves. Stir in beer. Add chicken. Cover; refrigerate at least 8 hours but no longer than 24 hours. Line 15x10-inch pan with sides with foil. Remove chicken from bine; rinse thoroughly under cool running water and pat dry with paper towels. Discard brine. Place the chicken in the pan. Refrigerate uncovered one hour to dry the chicken skin. Meanwhile, in a small bowl, mix all the rub ingredients except oil; set aside. Heat grill for indirect cooking. Brush oil over the chicken; sprinkle the rub mixture over the chicken. For two burner gas grill, heat one burner to medium; place the chicken on the unheated side of the grill. Cover the grill and cook 15 minutes. Turn chicken over; cover the grill and cook 20 to 30 minutes longer, turning occassionally until the juice of the chicken runs clear.
