Ingredients

  • 12 oz. Italian sausage
  • 1/3 cup chicken stock
  • 2 tbs. olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 peppers, thinly sliced
  • 1½ tsp. minced fresh oregano
  • Salt and peppers
  • 1 tbs. vinegar
  • 4 hero rolls, split lengthwise and warmed

Step 1

Brown the meat over medium high heat. Add chicken stock and cook and additional 10 minutes. Remove the sausage and pour off the oil, keeping 2 tbs. of the liquid in the pan. Add the oil, onions, and garlic, cooking until soft; about 6 – 7 minutes. Add the peppers, oregano, and seasonings. Cook until the peppers are soft, 5 minutes. Return the sausage to the pan and cook for 3 minutes, stirring in the vinegar. Adjust he seasonings and spoon the mixture into the rolls.
