Ingredients
- 2/3 cup hot water
- 2 TB brandy
- 1 TB instant espresso powder
- 1/4 cup plus 1 TB sugar
- 1/4 cup whipping cream
- 8 oz cream cheese, (low fat) softened
- 1/4 cup 1% milk
- 1/2 tsp vanilla
- 4 oz sponge-type lady fingers (30 halves)
- 1 TB cocoa powder

Step 1
In a small bowl, stir together hot water, brandy, espresso and 1 Tb sugar until sugar dissolves. In a medium bowl, with mixer on medium, beat whipping cream til soft peaks form when beaters are lifted. In a large bowl, with mixer on med-high, beat cream cheese and 1/4 cup sugar until fluffy, about 4 minutes. Continue beating; add milk and vanilla in a slow, steady stream. Beat until well mixed and fluffy, about 2 minutes. With spatula, gently fold whipped cream into cream cheese mixture.
In an 8x8 baking dish, arrange 1/2 of the ladyfingers, flat side up, in a single layer. Pour 1/2 brandy mixture evenly over; let stand until absorbed. Now spread 1/2 of the cream cheese mixture evenly over the ladyfingers. Top with the remaining ladyfingers, flat sides up. Brush remaining brandy mixture over ladyfingers, allowing the liquid to be absorbed. Spread evenly with cream cheese mixture.
Sift cocoa powder evenly on top. Cover with plastic wrap. Refrigerate 4 hours or overnight.
