Ingredients

  • 1 1/3 cups vegetable oil
  • 3 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 1/2 cups sugar
  • pinch of salt
  • 1 1/2 cups whole milk
  • 3 large eggs
  • 1 1/2 tablespoons poppy seeds
  • 1 1/2 teaspoons almond extract
  • 1 1/2 teaspoons vanilla extract
  • 1 cup blueberries

Step 1

Preheat oven to 350. Brush loaf pans with vegetable oil. Whisk flour, baking powder, sugar, and salt in a large bowl. Beat in milk, 1 1/3 cups vegetable oil, eggs, poppy seeds and extracts on medium speed until combined. Gradually beat in flour mixture until combined. Fold in blueberries with a spatula.

Divide the batter among pans and bake until golden brown on top and toothpick inserted in the center comes out clean - 1 hour to 1 hour 10 minutes. Transfer pans to a rack and let cool 10 minutes. Remove from pans and cool completely.
