  • 6 large sweet potatoes
  • 2 tablespoons unsalted butter, at room temperature
  • 3 tablespoons sour cream
  • 3 tablespoons maple syrup
  • Salt and freshly ground pepper, to taste

Step 1

Preheat the oven to 375 degrees F.

Pierce the potatoes with a fork or knife. Bake for 45 to 50 minutes until soft. Let cool slightly.

When the potatoes are cool enough to handle, cut them in half and scoop the potato pulp into a bowl. Add the butter, sour cream, and maple syrup.

Using a potato masher or sturdy whisk, mash or beat the potatoes until smooth. Season to taste with salt and pepper. Transfer to a covered casserole and keep warm until ready to serve.

Never had thought to use sour cream before it was really good! It added a distinct flavor that everyone wanted to know what it was

I loved the addition of maple syrup to the potatoes but we also added a little cinnamon to this recipe....plus a Tablespoon of brown sugar....and the baking instead of boiling was also better..
