Ingredients

  • Sauce:
  • 14-16oz lean sirloin, sliced thinly and seasoned with salt
  • 6-8oz snow peas
  • 6-8oz green beans
  • 2 garlic cloves, peeled and minced
  • 1-in ginger, peeled and minced
  • generous handful of peanuts or cashews
  • Peanut oil for frying
  • 4 tbsp soy sauce
  • 1 tbsp sugar or honey
  • 1 tbsp sherry
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp oyster sauce
  • 1 tbsp chili sauce
  • 1 tsp fish sauce
  • 1 tbsp cornstarch
  • 2 tbsp water

Step 1

Mix all sauce items except cornstarch in a small bowl. Mix water and cornstarch in separate bowl. Keep aside.

Heat wok on high with a thin layer of oil. When oil starts smoking, add garlic and ginger, allow to brown (15-30 seconds).

Add meat and layer on the bottom of the wok. Let sear and flip once. After flipping add vegetables and cover the wok to steam (2-3 minutes). Uncover and stir to ensure meat is cooked and vegetables are bright green.

Reduce heat to MEDIUM and use a slotted spoon to remove steak and vegetables to a large bowl. Add sauce to wok and stir allowing to approach boil. Slowly add cornstarch and stir continuously until sauce thickens and become tacky.

Once sauce has reached desired consistency reintroduce meat and vegetables, increase heat to high and stir well. Add peanuts, stir and remove to heat.

Serve immediately over steamed rice
