Huevos Scramble

Ingredients

• 1 egg
• 2 egg whites
• 1/4 c shredded pepper Jack cheese
• 1/4 c diced avocado
• sea salt and black pepper to taste
• 6 blue corn tortilla chopps
• 3 T pico de gallo
• 2 oz pineapple wedge

Step 1

Scramble egg and egg whites with cheese, avocado, salt and pepper. Serve with tortilla chips topped with pico, along with pineapple wedge.
