Ingredients

  • 2-3 Chicken Breasts
  • 4-5 Chicken Thighs
  • 3/4 cup Soy Sauce
  • 1/2 cup Light Brown Sugar
  • 1/2 cup water
  • 2-3 Tbsp garlic, chopped
  • 1 small ginger root, peeled and sliced
  • The smaller the slice, the GREATER the ginger flavor*
  • 3 Tbsp Sake (Japanese Wine)
  • Gekkeikan brand of Sake is very good**

Step 1

In a large Dutch over pot, add all the ingredients EXCEPT the chicken pieces; Bring the mixture to a rolling boil. Add the chicken pieces to the pot and cover. Simmer on MEDIUM LOW heat for 30-45 minutes. During the last 15 minutes of the cooking time, increase the heat to a boil and allow the mixture to thicken. *Watch the pot constantly during the last 15 minutes as the sauce will begin to burn quickly.* Serve with rice.
